The production is highly controlled & certified. In our organically farmed fields, we cultivate 5,000 olive trees of the "Hondrolia of Chalkidiki" variety, which translates to "fat olive" in Greek, due to the large size of the olive fruit. This variety is unique in the world, rich in trace elements, and famous for its size and taste. That is why Chalkidiki (or Halkidiki) is one of the most important regions in Europe in the production of "edible olives" or "table olives".
