It is produced exclusively by cold pressing, preserving its rich taste, aroma, and color.

t is characterized by a bitter and spicy taste with a long aftertaste because it belongs to medium-intensity olive oils. Its fragrances remind you of fresh grass, olive and tomato leaves, artichoke, and almonds. In addition, its important antioxidant substances, as well as the vitamins it contains (A, K, D), are preserved, while its acidity remains low.
We preserve the Entelechia olive oil in an elegant glass bottle. Its dark color protects the olive oil from light and maintains its excellent quality. Each bottle of 250ml & 500ml encloses our spirit, the Aristotelian philosophy, Entelechy. It’s the path from seed to plant, from olives to olive oil, that we call integration.

A single variety of extra virgin olive oil is produced from semi-ripe Makri olives harvested in October to early November with a very low acidity. The oil is extracted within 4-8 hours of harvest and cold-pressed under optimal conditions. Characterized by fruitiness of medium intensity, tones of red fruit, vanilla, artichoke, and tomato leaves together with balanced bitter and spicy tones. It is best consumed raw. A fresh olive oil to accompany all your dishes.

The production is highly controlled & certified. In our organically farmed fields, we cultivate 5,000 olive trees of the "Hondrolia of Chalkidiki" variety, which translates to "fat olive" in Greek, due to the large size of the olive fruit. This variety is unique in the world, rich in trace elements, and famous for its size and taste. That is why Chalkidiki (or Halkidiki) is one of the most important regions in Europe in the production of "edible olives" or "table olives".
Early Harvest
A single variety of extra virgin olive oil with an exceptionally low acidity, produced from the Makri olive, which has unique characteristics thanks to the local microclimate and the estate’s soil structure, and is harvested in the middle of October. Characterized by fruitiness of mid to high intensity with enhanced tones of fresh green olive and green banana, artichoke and freshly cut grass. The oil is extracted within 4-8 hours of harvest and cold-pressed under optimal conditions. Complex in taste, yet delicate with moderate bitter and spicy tones, it is best consumed raw as a finishing touch to all your dishes.
